Banana Bread (Dairy-free & Sugar-Free)

I made this Monday evening, and Oh My! - this is some really good banana bread!! Plus, it's dairy-free and sugar-free!



Ingredients - Bread
1 3/4 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
2 tablespoon rolled oats
7 pitted dates, chopped
5 ripe bananas
2 eggs
1/4 cup coconut oil
1/3 cup chopped pecans

Ingredients - Crumb Topping
1/4 teaspoon cinnamon
2 teaspoon coconut oil
1 tablespoon rolled oats


Directions
350 degree oven.

Grease loaf pan with some coconut oil. Mix crumb topping & set aside.

In a large bowl, sift dry ingredients together. In a food processor, pulse dates. Then add banana, eggs and coconut oil. Pulse until smooth.

Mix wet ingredients into dry ingredients until smooth. Fold in pecans.

Pour into loaf pan. Sprinkle with crumb topping.

Bake 50-55 minutes. Cool before serving.
